Preparation:
Start by selecting ripe mangoes with sweet, juicy flesh. Peel the mangoes and remove the seeds.
Cut the mango flesh into chunks and puree it in a blender until smooth. You can strain the puree to remove any fibers or leave it as is for added texture.
Transfer the mango puree to a wide, shallow pan or kadhai (Indian wok) and cook it over low to medium heat. Stir continuously to prevent sticking and burning.
If using sugar, add it to the mango puree according to your taste preferences. You can also add a splash of lemon juice for tartness and balance.
